Mix together until almost all the flour is incorporated and rest on the counter for at least 14 hours.
Preheat the oven to 450. Note: Some say to preheat with the dutch oven and some say don't. I'm on the don't team. I do this b/c when I heat the dutch oven with the oven, the bottom always ends up super crusty and thick.
While the oven is pre-heating, fold the dough a few times, then shape into a ball and place on parchment paper. Cover until ready
When the oven is fully pre-heated, cut a slit in the top of the dough ball so it can expand and rise. Carefully lift up the parchment paper and dough and place in the dutch oven.
Place two or three ice cubes in the dutch oven on the outside of the parchment paper. Place the lid back on and bake in the oven for 30 minutes
After 30 minutes, remove the lid and back for another 30 minutes with the lid off.
When done, remove the bread immediately from the dutch oven and rest and cool on a cutting border or wire rack.
